custom Models and future CE migrations

I'm looking to override the Users model to fit multiple types of users (someone asked a related question, link below).  My question is, do you have any suggestions for how to handle future migrations from CE?  For example, I'm thinking if it something as simple as CE creates a new column (e.g. favorite_color) and as long as I don't delete any columns, things should migrate fine.  Is there any case I should watch out for...

How do I install CE to my hostings.

I do not know where to start. I want to make a social site for games reviews, and I found CE that seems interesting(I been interested about ROR for several months but I never touched it.) I hope soeone could help me how to install it.

Does CE play well with other plugins?

I notice CE has a collection of pretty popular plugins under the hood. Are these plugins fairly easily "swappable" with other plugin solutions, or will CE not work right, or require a lot of hacking, without the included plugins?? For example, I'm not sure what type of authentication CE uses...so what if we went with the popular "restful-authentication" plugin from technoweenie? Does CE play well with other plugin solutions or is it not really recommended?...
